Strawberry Ice Popsicles
Climate is changing and summer seems to be forever in Bahrain. I definitely need more homemade popsicles to cool down, please ! So I decide to post one of my favorite popsicles recipe for the whole family. It is my famous strawberry ice popsicles.
Homemade ice popsicles is what we all need, right?
This popsicles recipe is very healthy and quite simple! It is made of delicious and seasonal strawberries, orange, grapefruit and optionally, maple syrup. For the second layer, I use canned coconut milk and vanilla powder !
Homemade popsicles?
I love to make popsicles with fruits because there is NO refined sugar added or ANY preservatives. In the supermarket, if you pay attention, you’ll notice that the frozen popsicles they sell are filled with massive unhealthy stuffs.
In this delicious strawberry ice popsicles recipe, I just add a bit of maple syrup. Again this is optional and it depends on how sweet you like them. A little trick here, if your strawberries are sweet and ripe, you won’t need any added sweetener at all.
This lovely strawberry ice popsicles recipe takes a few minutes of preparation and few hours in the freezer. i love to make a big batch for 1 or 2 weeks.
How to do the layers?
To do the layers style, you blend first altogether strawberries, juice of 1 orange and 1 grapefruit (you add eventually some maple syrup). Then you pour the mixture into your mould (fill to 3/4 approximately).
Secondly, you mix the ingredients for the second layer (coconut milk, vanilla) and add to the mould slowly. By the way, any popsicle mould will work. Then, you transfer it to the freezer for few hours (5 to 6 hours at least).
If you do them in the morning, you or the kids can even enjoy them the same day!
Covering them with chocolate is optional. But it is a plus ! How do we do ? Once my popsicles are ready, I melt some dark chocolate. I always go for organic and very very dark chocolate. You add some coconut oil to the dark chocolate and you pour some of the chocolate mixture on top of the popsicles. Serve immediately or place them on a waxing paper (in a big box). Put them back in the freezer to serve later.

Canned vs. carton coconut milk ?
In this strawberry ice popsicles recipe I love to use canned coconut milk as it is thick.
Because, if you compare both, canned and carton, you’ll notice that no added processed sugar or preservatives are required to make canned coconut milk, unlike coconut milk in a carton. Canned are thicker and creamier than cartoon.
So always keep an eye out for the carton coconut milk’s ingredients. Some brands are healthier than others.

Strawberry Ice Popsicles
Ingredients
Red layer
- 3 cups strawberries, washed and stem removed
- 1 orange, freshly juiced
- 1 grapefruit, freshly juiced
- 1-2 tbsp maple syrup, (optional)
White layer
- 1 can (small can) coconut milk
- 1 vanilla pod or few pinches of vanilla powder
- 1 tbsp maple syrup, (optional)
Chocolate Ganache
- 100 gr dark chocolate
- 1 tbsp coconut oil
Instructions
RED LAYER
- Mix all the ingredients together in a blender.
- Pour the mixture into ΒΎ of each popsicle molds.
WHITE LAYER
- Using a whisker, mix the coconut can with the vanilla and pour slowly over the 1st layer.
- Freeze your popsicles for at least 4 hours.
CHOCOLATE GANACHE – Once your pops are ready
- Melt 100 gr of good quality dark chocolate with 1 tbsp of coconut oil. Set aside.
- Remove the ice pops from freezer (once set) and pour some of the chocolate mixture on top of it.
- Sprinkle with nuts. Work quickly, then set back in the freezer to harden (I use to place them on a piece of parchment paper and put them back in a box in the freezer) or serve immediately as a dessert on a tray.
