Strawberry Ice Popsicles

A delicious treat that is homemade and full of delicious fruits! You could easily swap the strawberries for any other seasonal (and juicy) fruits ! Leave me a comment !

INGREDIENTS

Red layer

  • 3 cups strawberries, washed and stem removed
  • 1 orange, freshly juiced
  • 1 grapefruit, freshly juiced
  • 1-2 tbsp maple syrup - (optional)

White layer

  • 1 can (small can) coconut milk
  • 1 vanilla pod or few pinches of vanilla powder
  • 1 tbsp maple syrup - (optional)

Chocolate Ganache

  • 100 gr dark chocolate
  • 1 tbsp coconut oil

INSTRUCTIONS

RED LAYER

  • Mix all the ingredients together in a blender.
  • Pour the mixture into ¾ of each popsicle molds.

WHITE LAYER

  • Using a whisker, mix the coconut can with the vanilla and pour slowly over the 1st layer.
  • Freeze your popsicles for at least 4 hours.

CHOCOLATE GANACHE - Once your pops are ready

  • Melt 100 gr of good quality dark chocolate with 1 tbsp of coconut oil. Set aside.
  • Remove the ice pops from freezer (once set) and pour some of the chocolate mixture on top of it.
  • Sprinkle with nuts. Work quickly, then set back in the freezer to harden (I use to place them on a piece of parchment paper and put them back in a box in the freezer) or serve immediately as a dessert on a tray.
