You may have come across some okras —also known as lady’s finger— while enjoying a curry or while retreating in India or Sri Lanka. This vegetable is well known for cooking but is also used as an ancient beauty and wellness remedy : because by soaking okra in water, you can extract its healthy compounds.
If you’re looking to buy some, it’s super easy to find fresh okra in the Middle East. In Europe, it’s more of a summer find at farmer’s markets, but you can often find them in Asian supermarkets or Middle Eastern stores.
Ingredients + recipe
For this refreshing morning drink recipe, you will need okra water and watermelon.
a. OKRA WATER
First, let’s prepare the base, your homemade okra water. It really couldn’t be easier.
- Prep the okra. Slice 3 fresh okra pods into pieces (remove both edges) and transfer them to a large, lidded container.
- Infuse it. Cover the okra with water and refrigerate overnight (or at least 8–12 hours).
- Ready to use. The next morning, gently remove the okra pieces. You’ll notice the remaining liquid is luxuriously slimy, with its soluble fiber and mucilage. This okra water can last in the fridge for up to 4 days.
You could drink or sip it as it is, but the slimy texture can feel really off or be unpleasant. On the flip side, it’s almost flavorless — similar to cucumber water.

b. OKRA WATERMELON MORNING JUICE
I’ll admit—I couldn’t handle the sliminess of the okra water myself, even though I was eager for all the gut-loving and beauty-boosting effects.
That’s exactly why I came up with this recipe : blending my okra water with watermelon pieces for few minutes to have a so refreshing and sweet drink, with the maximum benefits of okra water – from fiber, antioxidants to vitamins – but without the sliminess. It was such a game-changer.
To make this smooth and vibrant drink or smoothie :
- Prep. Cut the watermelon into chunks.
- Blend. Using a high speed blender, blend the watermelon pieces with half of your prepared okra water until smooth and frothy (it will take few seconds only, I always make sure I don’t over-blend to keep as much fiber as possible). And your morning drink is ready and delicious (it tastes like watermelon juice, wow). This refreshing drink will keep well in the fridge for up to 24h (for maximum freshness and nutrients). Personally, I like to prepare enough for 2 days at a time (the same day and the day after), while keeping extra okra water in the fridge (it lasts longer and is always ready to use).

OKRA WATERMELON MORNING DRINK
Ingredients
Okra water
- 3 okras, cut into pieces
- 550 ml water
Okra watermelon morning juice
- 275 ml okra water
- 500 g fresh watermelon, cut into pieces, (3 big cups approx.)
Equipment
- 1 High speed blender (or a good blender)
Instructions
Okra water
- Rinse 3 fresh okra pods and slice them into small pieces (removing the edges).
- Place the sliced okra in a large jar or container with a lid. Add 550 ml of water. And let the mixture sit in the fridge overnight (or 8-12h approx.) so the nutrients infuse into the water.
- The next morning remove the okra pieces (the water should be thick and slimy). You can keep the okra water in the fridge in a sealed glass jar for up to 4 days, ready for blending with watermelon pieces.
Okra watermelon morning juice
- Cut the watermelon into chunks and add the pieces to a blender with half of your prepared okra water. Blend for few seconds or until smooth and frothy. Pour into 2 big glasses and enjoy (or transfer to a sealed jar for up to 24h).
- Keep extra okra water in the fridge and use it when needed. So easy !
