Mixed Nuts Mylk - mix your nuts !

This mixed nuts milk recipe is for me a fabulous alternative to dairy milk. It’s usually called a vegetal or nut milk as it is made out of nuts.

Actually, this mixed nuts milk tastes delicious and is so easy to make. You don’t have to measure and think about anything. You open your pantry and have a look at what type of nuts are in there: from pecan nuts to almonds, hazelnuts, cashews, brazil nuts or macadamia nuts.

You fill in 1 cup with mixed nuts, add it to a medium jar, and top it with water to cover the nuts for soaking. The day after you drain the nuts and blend them with dates, vanilla or cinnamon powder and a pinch of salt, along with fresh water. You pour the milk through a sieve, a light cloth or a nut milk bag and that’s it. You can keep it in the fridge for up to 2-3 days.

It can be very intuitive and it’s a matter of personal taste and preferences for your vegetal milk. You can mix only two or three different nuts or even 4 or 5. It is great to explore and see what’s the family favorite !

About the taste

My favorite duo is brazil and macadamia nuts, it gives a perfect creamy texture to the milk and a light nutty taste. If you like hazelnut, go for a full cup of it, the taste is absolutely amazing.

I always add (along with the brazil and macadamia nuts) some almonds and cashews for their health benefits and their nice “but more neutral”  taste.

So let’s get soaking and blending these delicious nuts for a delicious healthy (non dairy) milk!

Why soak the nuts ?

First, soaking softens the nuts so you can reach a creamy (dreamy) liquid milk after blending.

But soaking also removes the phytic acid which may cause indigestion and it will help your body to absorb better the essential nutrients (iron, calcium,protein, or zinc).

So this is a step you don’t want to skip.

Why does the milk separating in my fridge?

All nut milk separates. It is normal.

Commercial nut milk on the other side has stabilizers and emulsifiers that slow down the separation process.

So the best way to enjoy your homemade mixed nuts milk is to give it a good shake after taking it out of the refrigerator. So the milk will be at its best.

And to avoid the separation in your coffee or tea, gently warm up your mixed nuts milk to reduce the chance of separating. You could use a small pan, microwave or any froth milk.

Top Tip 

I am using this milk for nearly everything. From homemade pancakes to overnight oats, chia puddings, coffee and many more. Be aware that kids might like the milk a bit more sweet. So don’t hesitate to add some natural sweetener (2 dates) to the mixture !

MIXED NUTS MILK

A great (and easy) alternative to dairy milk. Just soak the nuts you have on hands. Perfect for the whole family, from granola, cereals to pudding and pancakes. Free of preservatives and other oils and sugar.

INGREDIENTS

  • 1 cup mixed nuts (almonds, brazil nuts, macadamia nuts)
  • 3 cups water
  • 2 dates (seeds removed) or 1 Tbsp maple syrup - optional
  • ½ tsp cinnamon or vanilla powder - optional
  • 1 pinch Himalayan salt

INSTRUCTIONS

  • Soak the nuts in a big bowl overnight and cover with 2 inches of water. Let them soak for 12 hours or more (up to 2 days).
  • The next morning drain the nuts and rinse them with clear water.
  • Add the nuts, dates, cinnamon or vanilla with a pinch of Himalayan salt in a high-speed blender and add 3 cups of water.
  • Blend them for 30 to 45 seconds or until smooth.
