Watermelon Tomato Gazpacho With Strawberries

Easy and quick Watermelon Tomato Gazpacho.

I am happy to share a new watermelon tomato gazpacho recipe !

Because cold soup offer often more nutrition than hot soup because it’s raw and I love that.

As the weather heats up in Bahrain and the summer is not far for me, I’ve decided that it was the right time for another tasty (and healthy) cold soup recipe.

If my green avocado soup is a more creamy, this new recipe is super fresh thanks to the watermelon, strawberries (yes strawberries!!) and tomatoes! It’s fruity and light – the right choice for a lunch break next to the pool or for some dinner with friends.

For this cold soup all you need is watermelon, strawberries, tomatoes and cucumber, spring onion, mint leaves and some lime. The taste is absolutely addictive.

On top of it, this watermelon tomato gazpacho is ready in less than 15 minutes.

Top Tip 

Right now, it’s the watermelon, tomato and strawberries season in Bahrain.

Whenever it is possible, I love to eat consciously. I try to buy more local and fresh products straight away from the farmer ! “Eat the seasons” because seasonal food offers a natural diversity, good for us and the planet !

If the strawberries are not in season, I just add more watermelon (or frozen strawberries) to this cold soup, it works perfectly too !

WATERMELON TOMATO GAZPACHO

Tomato gazpacho is a classic cold soup. This one is even better with watermelon and strawberries (and it’s totally vegan) ! One more thing : very very easy.

INGREDIENTS

  • 2 cups fresh watermelon, cut in chunks
  • 2 cups strawberries, cut in halves
  • 1 cup small tomatoes
  • 1 small cucumber, peeled and cut into pieces
  • 1 spring onion
  • 10 mint leaves
  • ½ lime, juiced
  • 1-2 pinch(es) of each Himalayan salt and pepper
  • 1/2 red chili, chopped (optional)

INSTRUCTIONS

  • Put all the ingredients in a high speed blender.
  • Blend until smooth.
  • Chill it for 1 to 2 hours in the fridge. Shake it well before serving.
