Tomato gazpacho is a classic cold soup. This one is even better with watermelon and strawberries (and it's totally vegan) ! One more thing : very very easy.

Ingredients

fresh watermelon, cut in chunks

strawberries, cut in halves

small tomatoes

cucumber, peeled and cut into pieces

spring onion

mint leaves

lime, juiced
1-2
pinch(es)
of each Himalayan salt and pepper
1/2
red chili, chopped (optional)
Instructions
Put all the ingredients in a high speed blender.
Blend until smooth.
Chill it for 1 to 2 hours in the fridge. Shake it well before serving.
