Tomato gazpacho is a classic cold soup. This one is even better with watermelon and strawberries (and it's totally vegan) ! One more thing : very very easy.

INGREDIENTS
2 cupsfresh watermelon, cut in chunks
2 cupsstrawberries, cut in halves
1cupsmall tomatoes
1smallcucumber, peeled and cut into pieces
1spring onion
10mint leaves
½lime, juiced
1-2pinch(es)of each Himalayan salt and pepper
1/2red chili, chopped (optional)
INSTRUCTIONS
Put all the ingredients in a high speed blender.
Blend until smooth.
Chill it for 1 to 2 hours in the fridge. Shake it well before serving.
