What a lovely red berries coconut bowl for breakfast, isn’t it? But guess what : I’ve added a new hidden ingredient to it, very healthy and full of fiber, without loosing the creamy texture and without tasting anything.
What hidden ingredient is in this delicious bowl?
It is frozen Zucchini !
For my breakfast bowl, I usually use at least half banana or some avocado for the creaminess and the sweetness. As I have already a lot of very sweet fruits in this coconut bowl, I wanted to add a little bit more fiber and “green” to it. The taste of the zucchini is very mild and the color is very light (you still have a beautiful colorful bowl).
Another benefit is that the zucchini is low in calorie and high in water – that keeps you hydrated.
It’s easy, simple and so, so tasty!

Top Tip about tiger nuts
I love to top my bowls with tiger nuts or to use them as a snack.
The tiger nut (or in Spain very famous “Chufa” for making a “horchata” milk) is not a nut but a tuber. It is very rich in fiber and magnesium. It provides a high amount of potassium and is famous to be one of the richest sources of non-meat protein that supplies a lot of energy essential throughout the day.

RED BERRIES COCONUT BOWL
INGREDIENTS
BOWL
- 1 cup frozen (or fresh) strawberries
- 1 cup frozen raspberries or frozen strawberries *
- 2 small frozen (or fresh) zucchinis (raw)
- 1 tbsp coconut butter (or coconut bliss)
- 3 tbsp coconut water (or more)
- 1 tbsp baobab powder (optional)
TOPPING
- 1 tbsp Tiger Nuts shredded or plain
- Few slices of fresh coconut (or coconut flakes)
- 1/4 dragon fruit sliced
- 2 tbsp coconut yoghurt
- Few blueberries and red currant
INSTRUCTIONS
- Add all the ingredients to a high speed blender and blend until smooth. Add more coconut water if needed to get a smooth consistency.
- Pour the liquid into a bowl and top it with your favorite fruits and superfoods.
