Mixed Nuts Mylk - mix your nuts !

Mixed nut milk is a dairy-free milk made by soaking one cup of raw mixed nuts overnight, blending them with fresh water, and straining. That’s the whole recipe. No measuring stress, no special skill, and no gums or stabilizers. I open my pantry, look at what’s in there, and fill one cup. Pecans, almonds, hazelnuts, cashews, brazil nuts, macadamias. Whatever is left over from other recipes goes in. It keeps in the fridge for 2 to 3 days.

Ingredients for mixed nut milk

  1. 1 cup mixed raw nuts. Any combination works. My favorite duo is brazil nuts and macadamias. Together they give a creamy texture and a light nutty taste that doesn’t take over. I almost always add almonds and cashews as well, for their nutrition and their more neutral flavor. If you love hazelnut, use a full cup of hazelnuts on their own. The taste is amazing.
  2. Fresh water. Throw the soaking water away. And use fresh water for blending.
  3. 1 date. For a light natural sweetness, if needed. Kids usually want it sweeter, so add a second, if you’re making it for them.
  4. Vanilla or cinnamon. Pick one, just a pinch is enouh.
  5. A pinch of salt. It brings the nut flavor forward.

How to make mixed nut milk

  1. Fill one cup with mixed raw nuts and tip them into a medium jar.
  2. Cover with water and soak overnight, 8 to 12 hours.
  3. Drain and rinse the nuts. Discard the soaking water.
  4. Blend with fresh water, dates, salt and your vanilla or cinnamon until completely smooth.
  5. Pour through a nut milk bag, a fine sieve or a light cloth.
  6. Bottle it and keep it in the fridge for 2 to 3 days.

Why mixing nuts is worth it

Every nut brings something different. Brazil nuts are one of the richest food sources of selenium. Almonds bring vitamin E and calcium. Cashews bring magnesium, zinc and iron. Macadamias bring the fat that makes the milk creamy. Blend four and you get a wider spread of minerals than any single-nut milk can give you, without doing anything extra.

Swaps and variations

  • No dates? Use maple syrup, or leave the sweetener out.
  • No nut milk bag? A clean thin kitchen towel works. A fine sieve gives a slightly thicker milk with more texture.
  • Want it creamier? Use less water, and lean on brazil nuts, macadamias and cashews (they are definitely creamier).
  • Want something neutral for coffee? Go heavier on almonds and cashews.

Why you need to soak the nuts?

There are 2 reasons to soak the nuts first: texture and digestion.

Soaking softens them so the blender can break them down properly, which is what gives you a creamy milk instead of a grainy one. Soaking also reduces phytic acid, the compound that binds minerals like iron, calcium, and zinc, and makes them harder for your body to absorb.

This is not a step to skip. Unsoaked nuts give you a thin, gritty milk. I know, I have tried it before.

Why does homemade nut milk separate?

Homemade nut milk separates in the fridge because it has no stabilizers or emulsifiers. Store-bought cartons contain both, which is why they stay smooth for weeks. But separation is actually normal. It doesn’t mean your milk has gone off.

Shake the bottle well before pouring. That’s all it needs.

Top tip : for coffee and tea, warm this mixed nut milk gently first, in a small pan, in the microwave or with a milk frother. Warm nut milk is far less likely to split (in your coffee or tea) when it meets hot liquid.

How long does homemade nut milk last?

Homemade mixed nut milk keeps for 2 to 3 days in the fridge, in a sealed bottle. There are no preservatives in it, so it won’t last like a carton, obviously. If it smells sour or tastes sharp, pour it out.

What to use mixed nut milk for?

I use this milk for nearly everything. Homemade pancakes, overnight oats, chia puddings, coffee, baking !

MIXED NUT MILK

A great (and easy) alternative to dairy milk. Just soak the nuts you have on hands. Perfect for the whole family, from granola, cereals to pudding and pancakes. Pure goodness in a bottle !

Ingredients
 

  • 1 cup mixed nuts (almonds, brazil nuts, macadamia nuts), or any others, soaked overnight
  • 3 cups fresh water
  • 1-2 dates (seeds removed) , optional
  • ½ tsp cinnamon or vanilla powder , optional
  • 1 pinch Himalayan salt

Instructions
 

  • Place the nuts in a big bowl and cover with water. Soak overnight, 8 to 12 hours.
  • Drain and rinse the nuts under fresh water. Discard the soaking water.
  • Add the nuts, dates, cinnamon or vanilla with a pinch of Himalayan salt, 3 cups of fresh water n a high-speed blender.
  • Blend them for 30 to 45 seconds or until smooth.
  • Sieve the milk through a nut milk bag, a metal sieve, or a light cloth over a large bowl.
  • Fill the milk into a glass bottle (with a lid) and place it in the fridge for 2-3 days.
  • Shake well each time before using.
