Is making a green smoothie that tastes delicious too much to ask? Even for a smoothie you need a recipe (at the very beginning I loaded my blender with different greens but most of the time it was not good at all). This green smoothie with cucumber and spinach ticks a lot of boxes.
It is tasty, it is a perfect way to have a breakfast on the go because it is ready in few minutes and it helps me to recover after an intense workout too. And clearly it is loaded with protein, vitamin C, minerals, antioxidants, vitamin K and iron. Thanks to the tofu, this smoothie is so smooth and fulfilling.
It’s a “green” recipe that I like to have on hand. But you can switch up the ingredients. You don’t like tofu, go for 1/2 banana or some coconut yoghurt. You don’t have a pear, swap it for mango or some berries.
What’s inside this beautiful green smoothie?
This healthy green smoothie recipe is made of cucumber and spinach -obviously-, pear, tofu, chia seeds and baobab powder ! A ripe pear sweetens it to perfection but feel free to add a date if you want an extra bit of sweetness.
So, with this type of breakfast, I am sure to start the day with a huge amount of vitamins.

I am an immense fan of smoothies and it’s a ritual every other morning of the week at home. Actually, smoothies offer endless options to get healthy ingredients into your body. In my opinion, the big plus of this green smoothie (vs. juice) is the fiber that it contains and the fact that it keeps you really full for a while.

Top Tip about this green smoothie
You probably know that tofu can be silk, medium soft or strong.
Derived from soya (you have to look for a non GMO and minimally processed, check out for the ingredients labels), itβs a good source of protein and essential amino acids. Tofu is part of my weekly diet, like once or twice.
Tofu seems to help to lower cholesterol, to reduce the likelihood of developing cardiovascular disease and to heal hot flashes (yes, pleaseeee!).
On the other side, there are different theories about your daily intake of soy and the fact that tofu is a processed food.
Again, I strongly believe that a healthy diet is a balanced and harmonized diet !
One more thing, my life changed once I got a high speed blender. Smoothie has never been so smooth and creamy… Vitamix or blendtec are 2 great brands, if you are looking to do some investment in a near future. Nowadays you have a lot of options on the market.

GREEN SMOOTHIE WITH CUCUMBER AND SPINACH
INGREDIENTS
- 1 small cucumber
- 1 pear cored
- 2 cups spinach
- 2 tbsp chia seeds
- 1 tbsp baobab powder
- β cup silk tofu - or 1/2 banana
- 1 cup cold water
- Few ice cubes
INSTRUCTIONS
- Place all the ingredients in a high speed blender and blend until smooth and creamy. The smoothie is done when no chunks remain.
- Pour into a large glass and enjoy it straight away.
