Cold Avocado Pea Soup

This cold avocado pea soup is loaded with green vegetables and enriched with Tahini (a sweet and nutty sesame seed butter). On top, it is super refreshing during summertime, especially here in Bahrain.

At the same time, it’s a nourishing and rich soup thanks to its 3 key raw ingredients.  Avocado, cucumber and green peas. Tahini and lemon are another super addition to this soup for its antioxidants and vitamin C. Finally, I spice it up with some fresh garlic, chili flakes, dried oregano, maple syrup and salt and pepper to taste. As always, it is an easy recipe. I use my high speed blender to do the recipe for me. You cut. You blend and it is done.

It is a delicious thick cold avocado pea soup and if you keep it in the fridge for 30 to 60 minutes, it is a lifesaver during the summer.

Raw and cold

As it is a raw soup, it gives you  a maximum of benefits. It hydrates you and brings you healthy fat. It’s just as good as gazpacho, even better.

Once you have blended all the ingredients together, if you want it cold, keep it in the fridge for 30 to 60 minutes for a cool down effect.

It will be perfect for a summer lunch or a light dinner.

COLD AVOCADO PEA SOUP

This soup is creamy and very tasty. It's cold and fresh. Last but not least, it is an easy recipe, the blender do the job. I liiiiike it !

INGREDIENTS

  • 1 ripe avocado, stoned and peeled
  • β…“ cup frozen green peas
  • 1 cucumber - (if you use the small cucumber, if not 1/2 cucumber is enough)
  • 100 ml rice milk or any other non dairy milk
  • 15 ml water - (or more if needed)
  • 1 lemon, juiced
  • 1 tbsp tahini
  • 1 tsp maple syrup
  • 1 tsp dried oregano
  • Β½ tsp dried chilli flakes
  • 1 garlic clove
  • Salt and pepper to taste
  • 1 tbsp roasted sunflower seeds or dehydrated parsley

INSTRUCTIONS

  • Transfer 1/3 cup of frozen green peas in a high speed blender.
  • Peel the avocado and take out the stone. Transfer to the same blender.
  • Wash the cucumber and cut the ends. Add it to the blender.
  • Put all the remaining ingredients in the blender and blend until smooth about 1-2 minutes. This soup is supposed to be thick and creamy, but if needed pour a little bit more water in and mix again.
  • Serve into 1 big bowl (or 2 small) and sprinkle some seeds, chili flakes over the soup. If you want it very cold, keep the soup in the fridge for 30 to 60 minutes before serving.
