Since stepping into menopause, I’ve read so much about the benefits of raw beetroot, especially for women. I have learned that it is its natural nitrates that can help boost circulation, support heart health, and even enhance stamina. So, from time to time, I like to make this vibrant beetroot, apple, carrot and ginger juice, using my slow juicer to keep as many nutrients (and that extra bit of fibre) as possible.

It’s a simple, skin-on recipe that you can easily prepare at home : refreshing, energizing, and naturally sweet without any added sugar. I often enjoy it after a workout or whenever I crave something colorful and hydrating. It’s one of those small self-care rituals that really makes a difference and that is super easy to make.

Why for women ?

Beetroot is a real powerhouse and probably underrated. Beets seem to help oxygenate your blood, gently support liver detoxification, and promote better energy and endurance. During menopause (and beyond), these benefits are key for vitality, circulation, and glow.

The synergy between the ingredients in this recipe makes this juice a natural multi-vitamin :

  • Carrot : rich in beta-carotene (vitamin A), supports skin renewal and a healthy glow.
  • Apple : adds natural sweetness, vitamin C, and soluble fibre that helps balance blood sugar and support digestion.
  • Beetroot : packed with iron, antioxidants, and nitrates to improve circulation and energy.
  • Ginger : anti-inflammatory, great for digestion, and gives this juice its energizing kick.

This beetroot juice is seriously delicious and sweet, with the kick (light or strong as you wish) of ginger. Also nutrient-dense, this wonderful juice helps support skin health, balance our metabolism, and is a natural detox.

Perfect ratio 1:1:1 and the ginger rule

For the perfect balance of flavor, I stick to a simple 1:1:1 + 1 cm ginger ratio. It means 1 medium beetroot, 1 apple, 1 carrot, and about 1 cm of fresh ginger. It works every time!

Juicing or not juicing : all is about balance

If your diet already includes whole plants and plenty of fibre, you can enjoy this type of juice without worrying. Think of it as a vitamin-rich shot of goodness, a way to nourish your body deeply, especially before or after workout.

Skin-on, yes or no?

Actually, it depends !

a. Are your ingredients organic?

If you have the chance to buy organic ingredients, keep the skin on and enjoy the extra fiber and nutrients. And one thing I like to pay attention to is the apple’s PLU code :

  • Code starting with 9 : it is organic, no synthetic sprays or wax.
  • Code starting with 4 : it is non-organic, often coated with petroleum-based wax that is hard to remove. In that case, it is better to peel your apple first before juicing.

b. Give them a good wash !

And if your fruits and veggies aren’t organic, don’t worry, a good wash makes a real difference. In fact, a study has shown that soaking your beet, apple, carrot and ginger in water mixed with baking soda for 12–15 minutes can remove up to 80–96% of surface pesticide residues (University of Massachusetts, 2017).

To do this at home, simply fill your sink with water, add 1-2 tbsp of baking soda and let your beet, apple, carrot and ginger soak for about 10 to 15 minutes, before rinsing them well.

So really, it’s your choice — you can either wash your ingredients well or peel them if that makes you feel more comfortable. What matters most is choosing what feels right for you and your body, and enjoying every sip knowing you’re taking care of yourself in a mindful way.

No slow juicer, use a blender !

A slow juicer is a great way to avoid heat while juicing your beetroot, apple, carrot and ginger, getting more benefits and keeping some fiber too.

If you don’t have one, you can blend all the ingredients together with a bit of water in a high speed blender. Then strain it to avoid the bits and get a nice clear juice. That’s it.

Swaps and tips

  • Make this beetroot juice more powerful, by adding 1 teaspoon of ashwaganda before drinking. You’ll barely taste it thanks to the strong beet and ginger flavours!
  • You can use green apple instead of red apple : to reduce the sweetness and add a tangy balance.
  • Go easy at the ginger at first : its flavor can be surprisingly strong (unless you love that fiery kick, of course!). So I would recommend to start with 1 cm and to adjust as you like.
  • Don’t like ginger : swap it for fresh turmeric root. It blends beautifully and brings its own anti-inflammatory magic.
  • The smaller you cut your ingredients, the easier it will be for your juicer or blender to do the job, and the smoother your juice will turn out.
  • Beetroot stain everything, it is a natural dye, so keep your messy apron close !

Make it beautiful with rose ice cubes

I love adding a few ice cubes with a dried rose inside. It turns a simple juice into something truly special. You can check my recipe for infused ice cubes for more creative ideas!

For the rose version, I fill my ice cube tray halfway with water, place a small dried rose in each cube, and let it freeze. A few hours later, I top it up with more water and freeze again — this way, the rose stays beautifully suspended in the middle.

It’s such a simple detail, yet it feels luxurious. You can spoil yourself and your friends with a glass that looks as beautiful as it tastes.

Storage tips

Pour your beetroot juice into a glass container (avoid plastic). Keep it refrigerated for up to 3 days, or freeze it in portions for later.

I often make a big batch, freeze small portions in large ice cube tray. In the morning, I simply thaw one cube for a couple of minutes and add warm water, a perfect morning glow ritual.

Who said healthy can’t taste amazing? This beetroot juice is proof. It is sweet, refreshing, and packed with goodness in every sip.

Ingredients
 

  • 1 medium beetroot
  • 1 carrot
  • 1 apple (red or green)
  • 1 cm ginger
  • 3-4 ice-cubes for serving, optional

Equipment

  • 1 Slow juicer OR
  • 1 Blender (and 1 sieve)

Instructions
 

  • Soak all ingredients with 1 tbsp of baking soda for 10-15 minutes and rinse well or peel them.
  • Cut them into medium to small pieces.
  • If using a juicer : juice everything together.
  • If using a blender : add all ingredients with a bit of water, blend until smooth, then strain if you prefer a clear juice (or keep it pulpy for more fibre).
  • Drink straight away or keep in the fridge for up to 2-3 days.
