Chocolate Chia Cookies

Chocolate Chia Cookies easy recipe. We love to let the kids bake those cookies.

These delicious chocolate chia cookies contains superfoods and are gluten free. Basically, they are healthy cookies with proteins and antioxidants !

For this reason, it makes a good ally in your healthy lifestyle. They are great when you are craving for the crunch of a cookie or something made of chocolate !

And this cookies recipe is very easy, with only 5 ingredients : nuts, buckwheat flour, natural sweetener (coconut honey or maple syrup), chia seeds and raw cacao powder.

Because you can keep them in an airtight containers for 1 to 2 weeks, you can quickly grab them for you or for the kids anytime.

Birthday cookies

I kind of systematically bake those chocolate chia cookies for my kids birthday parties. For more fun, I love to adapt the shape of our healthy cookies with our birthday theme! And I don’t hesitate to dip them in melted dark chocolate. And it’s a great alternative to all those unhealthy stuffs you can find at the supermarket.

Top Tip 

Being vegan and having a healthy lifestyle, you quickly learn about sugar alternatives. I quickly realized that coconut honey (or coconut nectar) is a famous healthy vegan substitute for sugar or normal honey.

Besides, it seems to be a great low-glycemic substitutes for sugar. Plus, it contains 17 amino acids and minerals.

Surprisingly, it doesn’t taste much like coconut. The taste is simply fantastic, close to caramel. This is one of my favorite natural sweetener.

Most of the time, it’s available in any organic supermarket! I find the BIONA “Blossom coconut nectar” in Al Jazirah, in their organic section.

CHOCOLATE CHIA COOKIES

Crunchy cookies, incredibly easy to cook and gluten free. I use different type of superfood so it's a superpower cookies recipe I have here !

INGREDIENTS

  • 1 cup almonds
  • ½ cup hazelnuts
  • ½ cup walnuts
  • 1 cup buckwheat flour
  • 5 Medjool Dates, seeds removed (or any other dates, natural and without sugar added)
  • 3 tbsp coconut honey or maple syrup
  • ¼ cup water
  • 3 tbsp chia seeds
  • 3 tbsp raw cacao powder
  • 10-20 gr organic dark chocolate (70% or 90%), broken into small pieces - optional

INSTRUCTIONS

  • Preheat the oven to 180 C (fan).
  • Place the nuts in a food processor and chop them for about 2 minutes, until you have flour.
  • Add all the other ingredients and pulse until you have a sticky paste.
  • Roll small balls and place them on a lining baking tray (use a piece of waxing paper for example). Flatten each ball using a spoon or your hands, until you have nice and thin cookies.
  • Add 1 or 2 pieces of dark chocolate on top of each cookies, pressing down slightly so the chocolate is nicely nested (this is optional but it’s a great addition to the cookies).
  • Put it in the oven for approx. 15-20 min or until brown and crispy. Check it after about 10 minutes to make sure it is not burning, as it depends sometimes on your oven.
  • Take them out and let them cool down before to eat them up!
