Healthy French Rice Pudding (Riz Au Lait)

I was eating French rice pudding (called also riz au lait) in my childhood, don’t you ?! It was so good and comforting.

The truth is being vegan pushes me to reinvent the classic recipes.

This is a new french rice pudding recipe better than the classic recipe that I love when I am feeling cold or hungry ! It’s a 4 ingredients recipe with non dairy milk (pick the one you like), brown rice, coconut sugar and a vanilla pod ! Basically, it’s a sweet rice as you cook the rice with plant-based milk and coconut sugar.

It’s a delicious dish with a delightful vanilla taste. Because I am using brown rice in this recipe (this is my philosophy. Beside having a plant-based diet, I always go for whole food), it includes more fiber, vitamins and benefits! Fiber is such a key in a healthy diet.

It takes a bit of time as you need to be around while the rice is absorbing the milk but it’s worth it (I try to cook something else while it is cooking like granola or dinner etc..to save my time).

Kids are in love. So I know it is a good recipe you need to try out and save. And for me personally, I love to have this delicious pudding for breakfast or for a snack when I want something very satisfying.

Cashew nut milk recipe

I add a cashew nut milk recipe here to make at home and to use with my delicious healthy french rice pudding or rice pudding.

If you don’t have time, just skip and head to the main recipe, using your favorite vegetal milk. Just be sure that it’s free of bad stuffs and there is no sugar added.

Top Tip

I use long grain rice with a cooking time of 45 minutes but this is really up to you.

Any variations?

I’ve tried the same recipe with brown short grain rice. But for this kind of rice, you’ll need to cook the rice for 60 min (instead of 45′). Actually, the exact time depends on what kind of rice you use. So you might need to add a bit more milk if there is a longer period of cooking.

How to serve rice pudding?

Serve it warm, at room temperature or chill. To serve it cold, cover and place in the fridge for 2 hours.

Add whatever you want : some fresh fruits, a splash of maple syrup or some coconut whipped cream to make it fancy !

FRENCH RICE PUDDING (RIZ AU LAIT)

I've been raised with "riz au lait" and this recipe is simply an obviously non dairy and healthy (no refined sugar here) version of the classic recipe.

INGREDIENTS

CASHEW MILK – 1 liter (SKIP IF YOU HAVE MILK READY)

  • 1 ½ cups cashews - soaked at least 6 hours or overnight
  • 4 ½ cups water
  • 1 tsp maple syrup or date syrup - optional

PUDDING

  • 1 liter cashew milk
  • 100 gr brown rice long grain
  • 50 gr coconut sugar
  • 1 ½ vanilla pods

INSTRUCTIONS

CASHEW MILK (SKIP IF NOT NEEDED)

  • Place the cashews in a medium bowl and cover with water. Let it sit for 6 hours.
  • Drain the nuts and discard the soak water. Rinse them well.
  • Blend them with 4 ½ cups of water (and 1 tsp of maple syrup, optional) in your blender until smooth and creamy.
  • Strain them through a nutmilk bag or a stieve. Put it in a jar and keep it in the fridge.

PUDDING

  • Wash the rice and drain it.
  • Using a sharp knife, slice the vanilla pod open. Scoop out the seeds. Add them along with the pods into a medium pan.
  • Pour the milk into the same pan. Then add coconut sugar and rice.
  • Start to cook over a medium heat until it begins to boil, stirring regularly.
  • When it boils, immediately turn the heat down to low and cook uncovered over low heat until thick and creamy (approximately 45 min or according to instructions on the packet). You still need to stir regularly (every 10 minutes) and keep an eye on it.
  • Remove the vanilla pods.
  • Pour into 4 medium or 6 small bowls and serve it warm, cold or room temperature, your preference !
