Surprising Caprese Salad
This surprising Caprese salad is full of flavors first. It is inspired by my beautiful memories of delicious juicy tomatoes.
When I travel with my family to the South of France or Italy, I know that one of the greatest things is the food and the fresh markets! It offers a huge array of fresh and juicy tomatoes in many varieties and colors.
This surprising Caprese salad reminds me of these little markets !
And instead of mozzarella, I love to add goat labneh balls or small chunks of feta!
Why is it “surprising”?
This healthy and tasty salad has an extra antioxidant and it’s coming from the blueberries!
I love to add fruit to my salad during the summer for a delicious sweet touch. This is too good. If you crave more mouthwatering ideas, check out my asparagus strawberry salad and my kale salad !
Behind the blueberries, I’ve added delicious fresh pink peppercorn, basil leaves, and crunchy radishes.
What about the dressing?
I kept it simple. A drizzle of olive oil, balsamic vinegar (or cream), and apple cider vinegar for a fresh touch.
This recipe is perfect for a light lunch and it makes a delicious starter too !
Top Tip
Apple cider vinegar is a must to have in your staples.
This is the only alkaline vinegar and is made from the fermentation of apple cider. It helps to control acidity in your body and has many benefits : helping to low cholesterol, in weight loss, boosting energy, clearing acne,…
The best is to add it to your salad in your daily routine. Following my grandmother’s recommendation, drinking a glass of water mixed with 1 tablespoon of apple cider vinegar should boost my metabolism.
Healthy surprising Caprese salad and….
Refreshing, flavorful and light !
