If I had to pick one of my favorite healthy desserts made with raw cacao, it would definitely be this healthy raw brownie. It’s rich, fudgy, and naturally sweetened, but when you add a layer of silky vegan chocolate ganache on top, it becomes next-level decadent. This is one of those recipes that turns healthy eating into pure joy.

Raw Brownie with Ganache

When I want to impress friends with a “can-you-believe-it’s-healthy?” dessert, I bring this brownie. Every single time, it’s a hit — a total crowd-pleaser. People can’t believe it’s full of nutrient-dense ingredients and completely unbaked.

The best part? It takes only 20 minutes to make, and it’s gluten-free, dairy-free, egg-free, soy-free, and vegan. Yes, all that, and still tastes like a candy bar!

Ganache or not ganache?

The vegan chocolate ganache is absolutely divine, glossy, rich, and melt-in-your-mouth delicious. This ganache is actually how you make your own chocolate. It’s pure magic when you realize you can do it yourself with just a few simple ingredients.

But if you’re short on time, you can totally enjoy this brownie without the ganache.

Still want a chocolate topping, replace it with a drizzle of melted dark chocolate (just melt it over a bain-marie or in the microwave).

Either way, you’ll end up with a fudgy, gooey treat that tastes like a little square of heaven.

Add a touch of superfood, make it functional !

I always take every opportunity to sneak in extra nutrients. Not because of diet rules but because it makes me feel good.

This raw brownie is already loaded with raw cacao, one of my favorite superfoods, but I love adding on top :

  • Goji berries – antioxidants and vitamin A, or
  • Dried mulberries – a natural source of iron and fiber, or
  • Freeze Dried blueberries or raspberries – bursting with polyphenols and flavor.

I sprinkle these on top of the ganache before it sets. They add texture, natural sweetness, and a beautiful pop of color, a functional dessert that looks gorgeous too.

Ingredients for the brownies and the ganache?

For the raw brownie : dates, raw cacao powder, walnuts, coconut oil, and a pinch of salt.

For the homemade and vegan ganache, because yes, you can make your own chocolate here : coconut oil, almond milk, raw cacao powder, maple syrup.

How to ?

For the brownie : your food processor will do the entire job, by mixing all ingredients together until forming a ball. Then flatten, press and place in the fridge.

While for the ganache, I heat a small pan with coconut oil, vegetal milk, raw cacao and maple and whisk until smooth. Pour over the brownie, decorate, and place in the fridge or freezer.

Storage tips

Keep these brownies refrigerated to maintain their perfect fudgy texture. If you love chilled desserts, try freezing a few pieces . Enjoy straight away or let them thaw a bit before enjoying !

Raw Brownie with Ganache

This is a non-guilty dessert with few ingredients only. If you've never cooked a raw brownie, try this amazing recipe with or without ganache !

Ingredients
 

BROWNIES

  • 1 cup pitted dates, fresh and moist (7-8 Medjool dates), (soaked in hot water for few minutes if too dry. Remove water and use the soaked dates).
  • ½ cup raw cacao powder
  • 1 ¼ cups walnuts, (or any nuts you have)
  • 1 tbsp coconut oil, melted
  • 1 pinch Himalayan salt

GANACHE (optional)

  • 2 tbsp coconut oil
  • 2 tbsp almond milk, (at room temperature)
  • 1/4 cup raw cacao powder
  • 2 tbsp maple syrup

TOPPING (optional)

  • Few dried raspberries, cacao nibs, goji berries
  • 1 pinch Himalayan salt

Instructions
 

BROWNIE

  • To make the brownie, put all the ingredients together in a food processor and pulse until it is well combined and smooth, for approx. 1 minute.
  • Line a rectangle loaf pan (24cmx13cm) with parchment paper.
  • Transfer the dough to pan and press very firmly until it is well distributed in the pan (using your hands first, then cover the dough with another parchment paper and press with the bottom of a glass to reach a thin layer of 0,5 cm approx.). Set aside.

GANACHE (optional)

  • Heat a small pan over medium heat, with coconut oil, almond milk, raw cacao and maple syrup. Using a whisker, whisk constantly until you reach a smooth texture (liquid).
  • Pour evenly the ganache over the brownies (moving the pan to help the distribution of the ganache) and sprinkle any topping you like and a pinch of Himalayan salt.
  • Refrigerate for 1 to 2 hours before cutting into squares to serve. Or freeze.
