My Healthy Vegetables French Fries

Everybody likes fries. Especially the kids (and me too), I can’t resist to French (or more exactly Belgian but this is not the topic here) fries temptation. So this is my new interpretation of French fries. A dream comes true with this new recipe: my healthy vegetables French fries, cooked in the oven.

How is it so healthy and tasty?

These French fries are super healthy. They are made of normal potato fries but also, sweet potato, parsnip, pumpkin, and carrot fries. Why? Because it improves my intake of nutrients for the day.

On top of it, instead of frying them, I cook them in the oven with a bit of olive oil or coconut oil. This way I reduce drastically the amount of oil they contain. To try to reach a crispy texture I turn on the grill for the last 5 minutes in the oven. The crisp is different than regular fries crisp, but they are to die for.

I definitely (and the kids more than everything) love to balance the sweetness of the vegetable fries with a little Himalayan salt after baking.

What about an air fryer?

For more crunchiness, I recommend using an air fryer for 15 minutes at 180°C. I always preheat my air fryer for 6 to 8 min at the same temperature. And while cooking, I check my batch halfway through to mix it (so they all cook well). Another tip would be not to overload the air fryer.

And yes, when I use my air fryer, I am not using oil at all.

To be honest, it’s a fantastic alternative recipe and I love to cook them regularly because kids are always asking for them !

It is easy to prepare in the oven and very very healthy !

Add to it a tasty mayo or ketchup (healthy too)

Try it out with my raw mayonnaise or healthy vegan tomato ketchup ! It’s delish and easy to prepare, without any chemicals, sugars or extra salt.

Alternatives for these vegetables French fries?

If you have only carrots or sweet potato left in the fridge, this is perfectly fine too. I often do only a big batch of oven baked carrot fries for the kids for lunch or as a light dinner for us all with a salad.

It is so easy with the oven. It is my favorite as I can do something else in the meantime.

Top Tip

Rosemary, native to the Mediterranean Region, not only tastes good in culinary dishes, but it is also a good source of iron, calcium, and vitamin A and B6.

If possible, choose the fresh rosemary over the dried one, it’s far superior in flavor !

You can buy them fresh, in a pot. They are easy to grow either indoors or outside in the garden!

HEALTHY VEGETABLES FRENCH FRIES

What’s better than homemade fries ?! Especially if they are full of benefits !

INGREDIENTS

  • 1 large sweet potato
  • 1-2 parsnips
  • 3 carrots
  • 1 piece pumpkin
  • Few rosemary sprigs (fresh)
  • 1-2 tbsp melted coconut oil or olive oil
  • 1 pinch paprika
  • Himalayan salt or gomasio to taste

INSTRUCTIONS

  • Preheat the oven to 180°C (fan).
  • Peel and wash all the vegetables.
  • Cut them into long fries.
  • Put them in a large bowl and drizzle them with oil. Sprinkle the spices. Mix well.
  • Arrange the fries on 1 to 2 baking tray(s) with parchment paper (not overcrowded). Place into the oven for about 20 minutes or until they are tender. Turn them occasionally.
  • If you have 2 trays, swap the trays over halfway through.
  • LAST STEP : switch on the grill function for about 3-5 more minutes to have a crispy texture for each tray. Be very careful to not burn them.
