This healthy vegan coleslaw recipe is a perfect addition to your next picnic or barbecue! It’s a raw salad, full of nutrients and so crunchy.

For this vegan coleslaw recipe, nothing works better than my popular raw mayonnaise recipe to make it lighter and perfectly creamy.

You can prepare a batch of raw mayonnaise in advance and so, your healthy vegan coleslaw or cabbage salad will be ready in 25-30 minutes only !

A nice barbecue with friends or with family and a delicious coleslaw on the side… That sounds great !! Sometimes, I prepare the salad in advance. It’s really easy, I place it in an airtight container and I take it along for a picnic or to bring at work.

You have to try this delicious combination. The creaminess from the raw mayonnaise and crunchiness from salad and the roasted nuts.

Top Tip

Why would you regularly add seeds to your dish?!

First because, it’s deliciously crunchy.

Second, because it’s a superfood.

I love to use hempseed for topping. It’s a superfood with a pleasant nutty flavor, already cultivated thousands of years ago. It includes all amino acids and is a high protein source (so important for vegetarian and vegan diet). It has a perfect ratio of omega 3 and 6 fatty acids.

Have you tried sunflower seeds? They are full of vitamins and minerals. They are an excellent source of Vitamin E and B as well of copper and magnesium followed by other health benefits.

HEALTHY VEGAN COLESLAW

A coleslaw is a classic recipe and I've turned it vegan and totally healthy (and insanely tasty).

Ingredients
 

  • ½ white cabbage, shredded
  • ¼ red cabbage, shredded
  • 1 apple, cored and cut into pieces
  • 1 carrot, julienned
  • ¼ cup parsley , chopped
  • ½ cup roasted seeds (pumpkin seeds & sunflower seeds)
  • 1 tbsp Hemp seeds
  • 3-4 tbsp raw mayonnaise

Instructions
 

  • Prepare both cabbages, the apple and the carrot. Chop the parsley finely. Put all ingredients in a large bowl.
  • Roast the seeds in a pan for 3 min or until golden brown.
  • Mix all ingredients together and add the raw mayonnaise.
  • Sprinkle the hemp seeds on top of it.
  • You can keep the salad for 2 days in the fridge.
