HEALTHY VEGAN COLESLAW
A coleslaw is a classic recipe and I've turned it vegan and totally healthy (and insanely tasty).

- ½ white cabbage - shredded
- ¼ red cabbage - shredded
- 1 apple - cored and cut into pieces
- 1 carrot - julienned
- ¼ cup parsley - chopped
- ½ cup roasted seeds (pumpkin seeds & sunflower seeds)
- 1 tbsp Hemp seeds
- 3-4 tbsp raw mayonnaise
Prepare both cabbages, the apple and the carrot. Chop the parsley finely. Put all ingredients in a large bowl.
Roast the seeds in a pan for 3 min or until golden brown.
Mix all ingredients together and add the raw mayonnaise. Sprinkle the hemp seeds on top of it.
You can keep the salad for 2 days in the fridge.
