Delicious Cinnamon Star Cookies

Cinnamon Star Cookies direct from the oven

I wish you a happy Festive Season with my very new and healthy cinnamon star cookies recipe ! This recipe is inspired by a traditional cinnamon star cookies recipe (‘Zimtsterne’). It’s an old recipe quite famous in Germany.

Actually, the original recipe is mainly made of ground almonds, eggs, sugar and butter.

To make it healthy, I replace refined sugar by coconut sugar. Additionally, I replace eggs by a chia egg, for more nutrients and for an healthy vegan version. I notice that by using coconut oil instead of butter, this cookies recipe has the same delicious consistency. At last, some buckwheat flour add to the recipe a nutritious and rich ingredient.

I am so happy with the results. This healthy version is totally dairy free and gluten free. I hope you will love them too !

And what is better than a nice cup of tea and some cookies? Even if there is no festive time coming up, I like to bake them with the kids. Sometimes, I change a little bit the ingredients, swapping cinnamon for vanilla or lemon. Kids love to sprinkle them with some colorful and organic sprinkles.

Top Tip about these cinnamon star cookies

You can keep these cookies in an airtight container for up to 2 weeks. I love to cook a big batch of cookies and offer them as a gift for Christmas !

CINNAMON STAR COOKIES

Prepare the batter in less than 10 minutes, place in the fridge for a while and then shape your cookies ! Then the oven is doing the rest ! So easy and a success with the kids !

INGREDIENTS

  • 1 chia egg - (1 Tbsp chia soaked in 2 ยฝ Tbsp water)
  • 150 gr ground almonds - (almond meal)
  • 50 gr buckwheat flour
  • 4 tbsp coconut sugar (40gr)
  • 1 tsp ground cinnamon powder
  • 5 tbsp coconut oil (melted)
  • 1 tbsp coconut syrup
  • 1-2 pinch(es) orange zest - (or 1-2 drops natural orange extract)
  • 1 pinch pinch himalyan salt

INSTRUCTIONS

  • Prepare your chia egg. Soak 1 Tbsp of chia seeds into 2 ยฝ Tbsp of water. Stir well and let it sit on the counter for 5 min.
  • In the meantime, mix ground almonds, buckwheat flour, coconut sugar, cinnamon powder and salt together in a medium bowl.
  • In an other bowl, mix all the other ingredients (coconut oil, coconut syrup, orange zest) with the chia egg.
  • Pour the wet ingredients into the dry ingredients bowl. First, mix it well with a wooden spoon. After few minutes, knead the batter with your hand and form a ball.
  • Put the batter for 30 min in the fridge.
  • Preheat the oven 165 C.
  • After 30 min in the fridge, roll out the batter on a floured surface (or use a silicon baking mat to roll it out). Cut out your cookies with a star shape and place it on a lined baking tray (or use your silicone mat).
  • Place the baking tray with the cookies in the heated oven. Bake for 10 minutes.
  • Take them out and let them cool down.
  • You can sprinkle them with some coconut powder (optional) or spread some nut butter on top!
