Prepare your chia egg. Soak 1 Tbsp of chia seeds into 2 ½ Tbsp of water. Stir well and let it sit on the counter for 5 min.
In the meantime, mix ground almonds, buckwheat flour, coconut sugar, cinnamon powder and salt together in a medium bowl.
In an other bowl, mix all the other ingredients (coconut oil, coconut syrup, orange zest) with the chia egg.
Pour the wet ingredients into the dry ingredients bowl. First, mix it well with a wooden spoon. After few minutes, knead the batter with your hand and form a ball.
Put the batter for 30 min in the fridge.
Preheat the oven 165 C.
After 30 min in the fridge, roll out the batter on a floured surface (or use a silicon baking mat to roll it out). Cut out your cookies with a star shape and place it on a lined baking tray (or use your silicone mat).
Place the baking tray with the cookies in the heated oven. Bake for 10 minutes.
Take them out and let them cool down.
You can sprinkle them with some coconut powder (optional) or spread some nut butter on top!
