Like everybody, I like sometimes a delicious comforting dish. Here is a creative and satisfying cauliflower fried rice, full of nutrients that I hope you will like as much as I do. It is a fantastic recipe for the cauliflower lovers or for those on a low-carb or grain-free diet.

Few years ago, I fall in love with cauliflower rice. It’s a great way to increase your vegetables intake and to reduce your carbohydrates (rice). The way I like to do it is incredibly simple : you blend it in a food processor.

This cauliflower fried rice is a really easy recipe with a short cooking time. It has delicious Asian spices and only 3 staples ingredients : cauliflower, carrot and zucchini !

You can eat it warm, as a side or main dish. You can even eat it cold and tossed on a salad the second day.

It’s a savory cauliflower fried rice, perfect for the whole family or to share with friends. It is gluten free, dairy free nd fully plant-based.

How to make cauliflower rice?

Very very simple.

I usually wash and chop the head of cauliflower into florets. Then, I place them into my food processor and pulse it until it resemble rice, using my usual blade.

You can also use your food processor with the grater blade to blitz it into pieces or use a medium size box grater. The box grater requires more time and energy but it is totally faisable.

Top Tip about sesame oil

I use some tasty sesame oil, which comes from sesame seeds. It’s one of the healthiest alternatives to normal vegetable oil options that I try to avoid.

The health benefits of sesame oil are its ability to improve hair and skin health, stimulate strong bone growth, to help to reduce blood pressure, to improve the digestive process and to lower inflammation.

Try to buy an organic cold pressed sesame oil to get the best of it.

CAULIFLOWER FRIED RICE

A delicious option if you don't want to eat rice or other grains and you want to feel lighter. Cauliflower rice is so easy to make and this is a 20 minutes fried rice recipe.

INGREDIENTS

  • 1 medium head cauliflower - (cut into florets)
  • 1 garlic clove, chopped
  • 1 small onion, chopped
  • 1 carrot, cut into small pieces
  • 1 zucchini, cut into small pieces
  • 1 green spring onion, cut into small pieces
  • 1 tbsp sesame oil
  • Fresh ground pepper to taste
  • 2-3 tbsp low sodium soy sauce - (Tamari sauce for gluten free option)
  • 1-2 pinch(es) ground ginger
  • 1-2 fresh chilly, finely chopped - (optional)

INSTRUCTIONS

  • Wash and chop the head of cauliflower into florets and put it in the food processor. Pulse until it starts resemble rice. Set aside.
  • Heat a large pan with the sesame oil and add the onion and the garlic. Let it simmer for about 2 minutes.
  • Add the carrots and the small cubed zucchini and saute them until tender for about 3-4 minutes.
  • Mix in a small bowl the soy sauce, the ginger, ground pepper and (optional) the fresh chilly.
  • Stir the cauliflower into the pan, mix it with the vegetables and pour the sauce over. Mix it well.
  • Top with green onions and enjoy!
