Summer time is salad time. And I have the right recipe for you. This butternut salad with avocado and coriander is completely raw and so refreshing. Yes, raw butternut is actually very tasty.

Butternut squash was an amazing discovery for me when I decided to become plant-based. I cook it a lot for its delicious sweet nutty flavor. And I finally decided to taste it raw. In this salad recipe there is actually an amazing balanced of flavors with tender avocado, coriander, lime and a bit of spiciness.

This salad is so easy to make and so good. It is a perfect basic salad recipe for summer and for any outdoor dinner with friends !

Easy peasy recipe

For this recipe I have grated half medium butternut as I would have done for carrots.

Then I add some coriander, olive oil, a splash of lime and a bunch of roasted seeds. I keep it in the fridge to make it very cold and at the very last moment I add 2 delicious avocado cut into cubes.

No need to say that this raw butternut salad with avocado and coriander is full of good nutrients.

Pumpkin and sunflower seeds

I love to add sunflower and pumpkin seeds to my salads. By toasting them it is a real upgrade to any salad. It is so crunchy with a toasted flavor and seeds are known to have a strong mineral profile.

You can use them for cookies, granola, crackers too.

RAW BUTTERNUT SALAD WITH AVOCADO AND CORIANDER

Did you ever eat raw butternut? It is so deliciously nutty and fresh. This butternut salad with creamy avocado and roasted nuts is revolutionary. It is a MUST TRY and so easy !

INGREDIENTS

  • ยฝ medium butternut - (400-450 gr)
  • 2 avocados, cubed
  • 1 handful fresh coriander
  • 1 tbsp pumpkin seeds
  • 1 tbsp sunflower seeds
  • ยฝ chili - (fresh or 1 tsp chili flakes)
  • 2 limes, squeezed
  • 3 tbsp olive oil
  • Gomasio & fresh ground pepper to taste

INSTRUCTIONS

  • Peel, remove the seeds and grate your butternut squash. Place in a bowl and set aside.
  • Remove the coriander leaves from the stem. Chop the leaves and add them to the bowl. Stir it together.
  • Squeeze the lime juice over the bowl. Add a drizzle of olive oil, chili, gomasio and fresh ground pepper to taste. Stir well.
  • Place your bowl into the fridge (10 minutes) to serve it very fresh.
  • In the meantime, roast the pumpkin and sunflower seeds in a pan for 1 to 2 minutes, until it starts to pop. Place on the side and allow to cool down.
  • When you are ready to serve, take your butternut salad out of the fridge. Cut your 2 avocados into cubes and add them to the serving bowl. Add your roasted seeds. Stir well. Enjoy!
