Walnut, Hazelnut and Basil Pesto

Vegan pesto with tasty walnut, hazelnut and basil.

I love so much my walnut, hazelnut and basil pesto recipe ! And I definitely enjoy cooking my own tasty pesto when it is made of fresh ingredients. I keep it in the fridge in a jar (or an airtight container) for a whole week ! This walnut, hazelnut and basil pesto is divine.

Besides I replace pine nuts (that you can find in the classic recipe) by walnuts and hazelnuts because it brings a lot of nutrients. And it is less pricey. I definitely succumb to this extra nutty touch too.

A so delicious greenish pesto !

Best of all, this healthy pesto takes no time at all as you have to pulse altogether walnuts, hazelnuts, basil, spinach, lime, lemon, olive oil, garlic and salt and pepper until smooth. It is a pesto packed with vitamins and minerals.

I’ve realized that parmesan is really not necessary in this pesto recipe. So this is a successful VEGAN pesto recipe.

But if you like the ‘cheesy’ touch in your pesto, add 2 tablespoon(s) of nutritional yeast flakes. It is delish for a cheesy, nutty, umami-like flavor.

And finally for those who like a spicy touch, add half chili !

WALNUT, HAZELNUT AND BASIL PESTO

Use your walnut, hazelnut and basil pesto for pasta, as a spread or for toast. This is so simple and so divine !

INGREDIENTS

  • 1 cup walnuts and hazelnuts
  • 2 cups fresh basil leaves
  • 2 cups young spinach leaves
  • ยฝ lime, squeezed
  • ยฝ lemon, squeezed
  • 5-6 tbsp olive oil
  • 1 garlic clove, grated
  • 2 tbsp water
  • 1-2 tbsp nutritional yeast flakes - (optional)
  • 1/2 chili - (optional)
  • Pinch of each Himalayan salt and pepper

INSTRUCTIONS

  • Put all ingredients in a food processor or in a good mixer. Pulse until well combined and smooth.ย 
  • Serve it with pasta, salad, on pizza or toast !
