Energy balls are all over Instagram. They are the Number 1 snack. Mainly because they are packed with the GOOD ingredients. On top of it, my raw chocolate truffles recipe is seriously easy, with only 4 ingredients. And it is SO tasty, it’s a winner recipe to make with the children. These raw chocolate truffles are the perfect bite for any time of the day.

When I am craving for something sweet, I always go for these truffles. They are made with healthy ingredients only : nuts, dates, coconut oil and raw cacao.

It’s definitely chocolaty. And you can make them insanely smooth like real truffles, by reducing the nut mix into flour. Or, they can be fabulously crunchy thanks to the nuts crushed into pieces (I so love crunch). And to make sure the truffle dough is really smooth, I don’t hesitate to soak my dates for 5 minutes in hot water, it makes a huge difference.

That being said, these little truffles are free of refined sugar (so no cravings later on) and gluten free! They keep you full for long and give you a kick of energy.

I like to do a big batch of them and to store them in the fridge to have a healthy snack on hand. Besides, I usually pack them in a lunchbox for school, travel or workouts !

Add extra power to these chocolate truffles!

If you coat them in different colors, it looks amazing. And you can roll them in superfood powders for extra energy.

You can finish a dinner with a cup of tea or coffee and some of these chocolaty truffles (or balls) on the side (red, black, dark green, etc..). I love to use superfood that are natural coloring : raw cacao powder, spirulina, sesame seeds, dried coconut, chia seeds, beetroot powder, activated charcoal powder, etc…

It’s a perfect homemade gift, too !!

To be honest, I cook them a lot. I use the nuts I have on hand (I always try to buy big batches of nuts when I travel or online to reduce the cost dramatically).

Top Tip 

If I use them as a post-workout snack, I like to add in the mixture some maca powder or spirulina powder. It’s a nice way to add more benefits to it (and for a consistent energy flow) !!

You can store them in the fridge for at least 1-2 weeks.

Raw Chocolate Truffles

This is one of the very first raw recipes I have ever made at home. And I make them all the time to have something on hand for sweet cravings ! And they are so versatile, it is a must try.

Ingredients
 

TRUFFLES

  • cup cashews
  • cup pecan
  • cup walnuts
  • 1 cup dates, pitted
  • 4 tbsp raw cacao powder
  • 1 tbsp coconut oil (melted)
  • 1 tbsp water

COATING (optional)

  • 3-4 tbsp superfood powder/seeds of your choice

Instructions
 

  • If the dates are dry, it is better to soak them first in hot water while you pulse the nuts.
  • Start by crushing the nuts in a food processor for about 20/25 sec. (Keep pulsing the nuts to your taste : into medium or small pieces for a crunchy texture or reduced into flour for a soft texture).
  • Drain the water from the dates (keep 1 tablespoon to add to the mixture) and towel them a bit. Remove seeds. Add the dates and all the remaining ingredients to the food processor and pulse them until you’ve reached a sticky dough. If it’s too dry and you can not easily roll them, add 1 more teaspoon of water or coconut oil and pulse again.
  • Roll the mix into medium balls using your hands. If it sticks, wet your hands slightly.
  • Optional : roll them into the coating of your choice : raw cacao powder, spirulina (stronger in taste), sesame seeds, chia seeds, beetroot powder, etc….
  • Place them in the fridge 1 hour or so, before eating.

Notes

* I like to use Medjool dates for their sweetness or Sokari dates. If they are hard, place them in hot water first to soften them.
