If you’re looking for a snack that does more than just fill you up, meet these Matcha Lemon Bars. Bold flavour meets clean energy in a bite-size bar that’s plant-based, dairy-free, and refined-sugar-free. With only four main ingredients plus 1-2 teaspoon of matcha powder, you’re getting a snack that lifts your mood, sharpens your focus and satisfies your sweet cravings in one go, all raw (meaning more benefits).

As someone who’s navigated major life transitions (hello post-menopause) and built a wellness-led food blog, I know how powerful a snack can be when it’s aligned with how you feel and what you need. These bars were born from one of my 7-day matcha challenges (yep, I did that!) — and they quickly became a favorite for work days, gym bags and flight snacks.

Why these bars tick all the boxes

An easy recipe

Matcha lemon bars

The ingredients list has never been so easy :

  • 1/2 cup cashews
  • 1/2 macadamia (or more cashews)
  • 10 to 12 dates (10 Medjool dates or 12-14 Shukari dates)
  • 1/2 cup dried coconut
  • 1/2 lemon freshly squeezed
  • zest of a full lemon
  • 1-2 tsp of matcha powder (+ some for topping)

Use a food processor to blend all the ingredients until you get a sticky dough that holds together easily. Transfer the mixture to a 15 x 15 cm mould, lined with parchment paper, and press it down firmly using your fingers or the back of a spoon (or the bottom of a glass) until even.
Your bars will be around ½ cm thick—but feel free to go a little thicker if you prefer a more satisfying bite.

Refrigerate for at least one hour to set, then cut into bars or squares.

Store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to a few weeks.
That way, your snack is always ready, for your coffee break, post-workout moment, or that late-afternoon pick-me-up.

Tip and variations about this matcha lemon bars

  • If the mixture seems too dry because your dates are very firm, add 1 Tbsp water and mix again.
  • Swap lemon for 2 limes for a tropical twist.
  • Use all cashew nuts instead of macadamia to reduce cost but still keep richness and crunch.
  • To package for travel : cut into bars, roll in extra coconut powder so the bottoms aren’t sticky, wrap individually in wax paper and stash in a sealed container.
  • These bars keep in the fridge in a covered box for up to 1-2 weeks — but I doubt they’ll last that long!

MATCHA LEMON BARS

Easy energy bars to make at home with matcha, lemon and coconut powder. It is raw and nutritious, great before, after workout or for sweet cravings.

Ingredients
 

  • ½ cup cashew nuts
  • ½ cup macadamia nuts, (or cashew nuts)
  • 10-14 dates, pitted *, 10 Medjool dates or 12-14 Shukari dates
  • ½ cup dried coconut (small desiccated flakes, shredded or powder), (and extra for topping) – all natural, unsweetened
  • ½ lemon or lime, freshly squeezed
  • Zest of 1 lemon
  • 1-2 tsp matcha powder, (and extra for topping)

Instructions
 

  • Place all ingredients in a medium/small mixer or a food processor and mix until well combined for 1-2 minutes. Sometimes you have to stop to scrap the sides down and to mix again.
  • Place the dough* in a baking pan (15x15cm) lined with parchment paper and using another parchment paper on top, press the mixture firmly using a small rolling pin or the bottom of a jar.
  • The bars have a thickness of approx. ½ cm (or more, depending of the size of your baking pan). Using a sieve, dust the top of the bars with extra matcha powder and sprinkle with some extra zest and coconut powder or flakes.
  • Cover the dough and place it in the fridge for at least 2-4 hours to set.
  • Cut the bars lengthwise and eat them whenever needed. They last in the fridge in a covered box for 1 to 2 weeks (or in the freezer for even longer).

Notes

* If your dates are too dry, soak them upfront in some water. Then remove water and give them a good squeeze before mixing in a powerful food-processor.
* If the whole dough seems to be too dry, you can always add 1 Tbsp of water and mix again. If too wet, add extra coconut.
