Ingredients for this ginger elixir
This non alcoholic elixir is made with the best ingredients for your body and you know exactly what is inside :
- Ginger : 250 g fresh ginger and peeled. Peeling your ginger gives a brighter yellow colour. Chopping it finely before blending makes it smoother and easier to strain.
- Lemon : 6 to 7 fresh lemon to make 200 ml of water.
- Sugar : coconut or raw cane sugar (for a lighter golden colour, perfect for cocktails)
- Turmeric and fresh ground pepper : turmeric powder for its anti-inflammatory effects and fresh ground pepper to activate it !


The right sugar matters
Iโm a big believer that what we put in our bodies matters, so in this recipe, thereโs zero refined sugar.
Instead, I love to use dark coconut sugar for its rich, almost caramel-like flavour and minerals. You can swap it for date sugar (for depth) or raw cane sugar.
QUICK TIPS
- If youโre preparing this elixir for cocktails and want a light color, go for light brown/beige raw cane sugar to keep that beautiful yellow hue, it looks stunning in drinks!
- Coconut or date sugar can sometimes form small lumps. To keep your elixir perfectly smooth, pass the sugar through a fine sieve before adding it. This will help to blend and dissolve easily without leaving any grains behind.

How to make it step by step
This recipe is insanely close to the original Gimber you find out there. I honestly couldnโt believe I had reached the same vibrant taste ! Here is how, step by step !
Step 1 – All about ginger !
Wash and peel your ginger. Cut into small pieces and blend it with some water. Now you want to simmer it for 15 to 20 minutes to deepen the flavors and also to help later the sugar dissolve.
Step 2 – Add, add, add !
Now you want to add your fresh squeezed lemon juice, sugar, turmeric and fresh black pepper and simmer for another 5 to 10 minutes until the sugar is dissolved and all the flavors are beautifully infused.
Step 3 – Last step but not the least !
Strain your golden brown elixir (to remove the pulp) and let it cool down gently on the kitchen counter. Place in a glass jar in the fridge for up to 1 week.
How to use it (so many ways!)?
Just like Gimber, this ginger elixir is ultra-versatile. Here are a few of my favorite ways to enjoy it :
- Classic sparkling drink : 1โ2 tbsp elixir (or more) + sparkling water + ice + optional fresh thyme
- Warming ginger tea : 1โ2 tbsp elixir (or more) + hot water + slice of lemon
- Iced ginger refresher and spicy : 1-2 tbsp elixir (or more) + still water + a splash of lime + a pinch of cayenne pepper on top or some fresh chopped chili (2 slices is enough), our big favorite at home !
- Cocktail Magic : add a splash to mojitos, margaritas, or spritz for a ginger kick !

The Best Homemade Ginger Elixir, Inspired by Gimber
Ingredients
- 250 g fresh ginger, peeled and cut into pieces
- 400 ml water
- 6-7 lemon, freshly squeezed (approx. 200 ml)
- 150 g coconut sugar or cane sugar (fine and lumps-free) , The lighter the sugarโs color, the paler and more golden your elixir will turn out.
- 1 tsp turmeric powder
- 1-2 pinches fresh ground black pepper
Instructions
- Wash and peel your ginger (eventually use a knife when needed). Cut into small pieces.
- In a high speed blender, blend ginger and 400 ml water together until smooth and golden.
- Transfer to a pan and cook on low heat for 15-20 minutes (but don't boil).
- In the meantime, squeeze the lemons. Set aside.
- Once the ginger liquid is ready, add coconut sugar, turmeric, fresh ground black pepper, lemon juice. Stir well, then let it simmer for another 5-10 minutes to infuse, mixing regularly.
- Strain your liquid through a sieve and let it cool down. Store in a glass bottle in the fridge for up to 1 week. Before using, shake your bottle.
HOW TO USE IT
- Add 1 to 3 Tbsp of this ginger elixir in a glass filled with ice cubes and top with sparkling water !
