Breakfast Sweet Treats

The Perfect Two Berries Crumble

A delicious and tasty 2 berries crumble, very versatile too

Because I love a good crumble and even more I love berries. Here is a fantastic two berries crumble recipe. It has natural ingredients, it is vegan and plant-based (no butter), and totally gluten-free!

What’s a crumble originally?

It is a baked and crumbly dessert, made out of white flour, butter and white sugar and it is placed on top of fruits.

This recipe is an absolute revolution for its flavors and the fact that it is super healthy.

Finally, you can serve this two berries crumble by itself, with some dairy free ice-cream or yoghurt. That’s really up to you !

A vegan crumble recipe made of…

I’ve made this crumble with very tasty ingredients that you will love : strawberries, blueberries, maple syrup, almond flour, gluten free oats, coconut oil, few nuts & a pinch of Himalayan salt.

The strawberries and blueberries are even more tasty if you buy them juicy and in season ! This vegan crumble (as tasty as a crumble can be) is a clean eating dessert (yes it is possible) that will bring you to the moon for its sweetness and crunchiness.

I use to cook this recipe during the weekend for family breakfast (I cook it in the morning when I wake up earlier) or while the weather is great, as a dessert for a picnic with friends ! It’s easy to share and everybody loves it for sure (most people like berries, right ?) !!

You can eat this delicious crumble warm or even cold.

This recipe is versatile

You could swap your berries for mango, peaches or apricot. You could buy them frozen (and already cut) too if you run out of time.

Anyway what I like in this delicious crumble recipe, you don’t spend too much time for preparing the fruits and the cooked berries intensify their sweetness.

Top Tip

One of my first choice sweetener is pure maple syrup, which is an unrefined natural sweetener.

It is totally delicious and it contains minerals and antioxidants. It is known to have a lower score on glycemic index than cane sugar for example. But it is still sugar so it has to be used in moderation.

When you buy it, it’s important to check out if it really is 100% pure. The darker it is the healthier it is.

This recipe could work too if you don’t know what to cook for a vegan friend (or intolerant to gluten).

Total time 1 hour
Servings 8 portions

INGREDIENTS

  • 1 ½ cups blueberries
  • 1 ½ cups strawberries, chopped
  • 1 tbsp maple syrup
  • 1 ½ cups almond flour
  • 1 ½ cups oats - (gluten free)
  • ¼ cup maple syrup
  • ¼ cup coconut oil - (melted)
  • 1 handful almonds, hazelnuts and pecans, chopped - (to mix with the last layer)
  • 1 pinch Himalayan salt

INSTRUCTIONS

  • Preheat oven to 175°C (fan).
  • Wash the strawberries under clean running water and remove the stem. Cut them into 4. Place them in a medium bowl.
  • Wash the blueberries. Then, add them along with 1 Tbsp of maple syrup to the strawberries bowl and toss until well coated. Set it aside.
  • Chop the almonds, hazelnuts and/or pecans. Set aside.
  • In a different medium bowl, mix well the almond flour, oats, maple syrup, coconut oil, and salt until you have a sticky texture. It is the crumble.
  • Pour ¾ of the crumble into the bottom of a +/- 20 cm (+/- 8 inches) tart pan (or any other ovenproof dish). Press slightly the crumble evenly with a wood spoon.
  • Pour the berries over the crumble (making sure the remaining berries' water/juice stays behind in the bowl, use it for a smoothie or for your iced tea).
  • Mix the remaining crumble mixture with the chopped almonds, hazelnuts or pecans. Then add this mixture over the berries.
  • Bake in the oven for 40-45 minutes or until the crumble is lightly brown. Make sure you are checking a few times after it has cooked for 30 minutes as every oven is different.
