Vegetarian Cauliflower Pizza Low Carb

Maybe you have a low carb diet but you are craving for a pizza? Or maybe you want to improve your daily income of vitamins but still you want desperately a pizza? I’ve been through that too as I try to get my family dinner healthier every day. I finally have made a delicious compromise being able to do an absolutely fantastic pizza dough made with cauliflower, eggs (or chia eggs) and cheese. It is my vegetarian cauliflower pizza low carb recipe and at home, it is party time every time I make it.

This vegetarian cauliflower pizza recipe is too good. It meets a lot of healthy criteria. And because it is made with cauliflower, it’s a delicious light base very low in carbohydrates and slightly crusty! This type of pizza dough, made of vegetables, is loaded with all the flavors of a pizza without using refined carbohydrates.

And finally, it’s GLUTEN FREE!

For the tomato sauce, I use an organic tomato paste. But if I have a bit of time ahead I love to cook (and it’s not too long) my homemade healthy ketchup.

Best of all, you can add whatever you and your family like for the topping (any greens, veggies, avocado, pesto, or extra cheese -vegan or not…). So you can definitely use your favorite ingredients!

How to reduce my cauliflower into a small grain consistency?

Ideally, I use a food processor to achieve a couscous-like consistency (don’t over-processed it because your cauliflower will release too much water).

If you don’t have a food processor, you could use a blender but you might need to stop and scrap the corners few times.

And, without any of them, it is still possible if you use a grater to reduce your cauliflower into couscous.

Cauliflower can easily be described as a superfood. It seems to have beneficial effects on numerous aspects of health.

Maybe you know already that it is very low in calories and also full of vitamins and minerals. Cauliflower is an important source of dietary fiber for digestive health. It is also very rich in antioxidants and anti-inflammatory compounds.

Did you know that a one-cup serving of cauliflower contains around 70% of the recommended daily value of vitamin C. This could help to reduce inflammation, it could boost immunity and keep the body free of harmful bacteria, infections, and common colds.

Do you want an egg free option?

If you want to make the same pizza dough without eggs, you can simply replace the 2 eggs by 2 chia eggs !

How to do it?

For 1 egg, you need 1 Tbsp chia seeds and 2 1/2 Tbsp of water. Mix the water with the chia seeds. Let it sit for 5 min to have the perfect egg texture. That’s it! In this case, the cooking time for the dough is around 20 to 25 minutes.

INGREDIENTS

Cauliflower pizza base

  • 3 cups cauliflower florets - (or 240 gr cauliflower florets)
  • 2 eggs
  • 1 garlic clove - grated
  • ½ tsp dried oregan
  • ½ tsp dried basil
  • 1 cup grated mozzarella cheese - (for a vegan option use vegan mozzarella)
  • Himalayan salt and pepper to taste

Topping option

  • 4 tbsp tomato paste or sauce
  • 4-6 baby tomatoes - cut into 2
  • Few rocket leaves
  • Few pine seeds
  • Extra mozzarella - (optional)

INSTRUCTIONS

  • Preheat the oven to 180°C.
  • Wash the cauliflower and cut it into small florets. Transfer 3 cups of cauliflower florets (or 240 gr.) to your food processor and pulse it several times, until a small grain consistency is achieved (like couscous grains).
  • Place the cauliflower grains in a large mixing bowl. Using a wooden spoon, mix in the eggs, grated mozzarella cheese, garlic, basil, oregano, pepper, and salt. Stir it well to create a uniform mixture.
  • Transfer the cauliflower mixture to the baking sheet and use your hands to press the dough firmly and evenly into 2 small medium rounds. Make them ½ cm thick or less (but don’t make the rounds too large). Try not to leave any thin spots where the crust might crack.
  • Bake for 15 to 20 minutes maximum or until the top is dry and light gold. Then, take the pizza out of the oven.
  • To complete the pizza, add tomato paste and your favorite toppings. Bake for another 10-15 minutes, until the topping are heated thoroughly. Slice and serve hot.
  • For this flavorful recipe, I've added a homemade tomato sauce, fresh baby tomatoes, rocket salad and pine seeds.
