I blend in a medium blender: 1 celery stick, almond maple butter from Early Riser (or any almond butter), lemon, garlic, tamari, and extra water for the perfect consistency of this easy dressing recipe.

I am using this new healthy brand we have in town, Early Riser. They make a fabulous (and healthy) almond maple butter that is slightly sweet. It is a mix of roasted almonds and a splash of maple. But if you can’t find this brand, go for your favorite almond butter or make your own (by blending roasted almonds in a high-speed blender for a few minutes, until smooth). It works too.

Feel free to adjust the amount of tamari to your taste preference.

For a thinner consistency (ideal for a salad dressing), you can add a bit more water (or less).

On the other side, for a thicker consistency (ideal for a dipping sauce), I would recommend using less water or adding more almond butter.

Get creative! This dressing is a great base for customization. Try adding fresh herbs like dill or parsley for a twist.

Finally, as I use almond maple butter from Early Riser which is slightly sweet when I make this sauce with regular almond butter, I add a splash of maple syrup, to enhance the delicious and sweet taste coming from the almond butter (but again this is optional if you want to keep it more savory).

CREAMY CELERY ALMOND DRESSING

A vegan type dressing or sauce, that is ready in minutes and that will sparkle anything you like from salad to buddha bowl. So tasty, with a garlicky and lemony twist.

Ingredients
 

  • 1 celery stick, cut into pieces
  • 2 Tbsp almond maple butter (from Early Riser) or plain almond butter
  • 3 Tbsp fresh squeezed lemon
  • 1 garlic clove, peeled and chopped in half
  • 1 Tbsp tamari sauce
  • 1-2 Tbsp water
  • Salt and pepper to taste
  • 1-2 tsp maple syrup , (optional)

Equipment

  • 1 medium blender

Instructions
 

  • Wash and cut the celery into pieces. Peel the garlic clove and chop it in half.
  • Add them to a medium blender with all the remaining ingredients, starting with 1 Tbsp of water. Blend until smooth and adjust to your taste. Enjoy!
