For fresh fruits, wash them first. Cut the strawberries into pieces. For frozen fruits, no need to defrost or to cut them.
In a medium sauce pan, combine your berries with the juice of 1 orange and a pinch of vanilla powder. Bring it to a boil over medium-high heat, stirring occasionally.
Once boiling, reduce to medium heat and let it simmer for 5 to 10 minutes, stirring regularly. The compote is ready when it has a smooth consistency (strawberries pieces must be soft).
Remove from the heat and mash the berries with a potato masher or a fork until the desired consistency.
Serve slightly hot or let it cool completely before to pour in an airtight container and refrigerate for up to 6 days.
