PINK BEETROOT HUMMUS
This hummus recipe is a real success, packed with all the benefits of the beetroot and this lovely pink color that everybody admires.

- 1 can chickpeas, rinsed and drained - (organic if possible)
- 1 small raw beetroot, peeled and chopped - (you can use precooked too)
- 5 tbsp olive oil
- 1 lemon, squeezed
- 2 tbsp tahini
- 1 clove garlic, chopped
- 2-3 pinches ground cumin and ground coriander
- ½ chilli - (optional)
- 3 tbsp water
