Yield: 4 popsicles

HEALTHY GREEN AVOCADO POPSICLES

A perfect summer snack for kids & adults ! Easy. Packed with vitamins (but as many of my recipes, you won't notice they are healthy).

Ingredients
 

POPSICLES

  • ½ avocado
  • 1 cup fresh ripe pineapple, (the ripest the sweetest)
  • 1 cup almond milk
  • ½ lime, juiced
  • 2-3 drops vanilla extract

TOPPING - optional

  • 2 tbsp granola, (optional)
  • Few blueberries, (optional)

Instructions
 

POPSICLES

  • Mix all the ingredients in your medium blender until smooth.
  • Pour the mixture into 4 (medium sized) ice-pop molds (or use cardboard cups), dividing evenly.
  • Insert ice-pop sticks.

TOPPING

  • Sprinkle a bit of granola and few blueberries in the ice-pop mold (for the bottom layer).
  • Freeze them until firm (for at least 6 hours or overnight).
  • You can keep them up to 4 days in the freezer.
