Tasty cucumber salad, Asian style

ASIAN GINGER CUCUMBER SALAD

This recipe is a delicious "thai style" salad ! Another way to eat cucumber with a flavorful sauce here !

Ingredients
 

CUCUMBER SALAD

  • 2 small cucumbers, spiralized or thinly sliced
  • 1 carrot, julienned
  • 1 daikon (white radish) julienned

DRESSING

  • 1 tbsp miso paste (organic)
  • 1 tbsp grated ginger
  • 1 tbsp sesame oil
  • 2 tbsp white rice vinegar
  • 1 tbsp maple syrup (or honey)
  • 1 lemon juice
  • 1 tsp tamari sauce
  • 1 tbsp water

TOPPING

  • 2 tbsp black sesame seeds
  • 1 nori sheet

Instructions
 

SALAD

  • Wash the cucumber, cut the ends and spiralize them (or use a peeler to make ribbons).
  • Peel the carrot and the daikon, before you julienne them.
  • Mix the salad together in a large mixing bowl.

DRESSING

  • Grate the ginger and put all the remaining ingredients together into a jar. Whisk them together until well combined (and until the miso is smooth).
  • Pour it over the salad and mix well together.

TOPPING

  • Sprinkle the salad with sesame seeds. Cut the nori sheet into thin strips (using scissors) and sprinkle them on top.
