CUCUMBER SALAD
- 2 small cucumbers, spiralized or thinly sliced
- 1 carrot, julienned
- 1 daikon (white radish) julienned
DRESSING
- 1 tbsp miso paste (organic)
- 1 tbsp grated ginger
- 1 tbsp sesame oil
- 2 tbsp white rice vinegar
- 1 tbsp maple syrup (or honey)
- 1 lemon juice
- 1 tsp tamari sauce
- 1 tbsp water
TOPPING
- 2 tbsp black sesame seeds
- 1 nori sheet
SALAD
Wash the cucumber, cut the ends and spiralize them (or use a peeler to make ribbons).
Peel the carrot and the daikon, before you julienne them.
Mix the salad together in a large mixing bowl.
