This is a basic in my kitchen. You can adjust it to your own taste by adding more lemon, a splash of maple syrup or some chili flakes if you want it spicy.

INGREDIENTS
3tbsptahini (sesame butter)
2tbspolive oil - (or hot water if you want to reduce oil)
3-4tbsphot water
1garlic clove, grated
½tbspmaple syrup
Himalayan salt to taste
½tspchili flakes - optional
½lemon - optional (if you want a lemony touch)
INSTRUCTIONS
In a medium bowl, whisk all the ingredients together until smooth (starting with 3 tablespoons of water. And if you want the dressing to be more liquid, add an extra tablespoon of hot water).
Keep in the fridge in an airtight jar for up to 4 days.
Each time you use this delicious Tahini dressing, stir it well and add eventually a bit of water to have a nice runny texture.
