VEGAN POKE BOWL

A delicious bowl made with 3 layers : rice, marinated tofu and delicious veggies !

INGREDIENTS

  • 2 cups brown rice, cooked
  • 1 cup vegan poke (tofu), marinated *
  • ½ cup edamame or green peas, cooked
  • 1 handful broccolini, raw or roasted
  • 1 carrot julienned or spiralized
  • 1 avocado cubed
  • 1 cucumber, sliced
  • 2-3 radishes, sliced
  • ¼ pineapple, cubed
  • 1 jalapeno, sliced
  • 1 tsp sesame seeds for topping or nori flakes
  • 1 tsp coconut oil or olive oil
  • 2 pinches paprika

INSTRUCTIONS

  • Cook brown rice according to instructions.
  • Prepare your vegan poke (tofu) following our recipe (vegan poke)*.
  • Roast broccolinis for 5-10 minutes in the oven (180C) with a drizzle of coconut oil (or olive oil) and fresh ground pepper and paprika.
  • Cook edamame or green peas, in the microwave or steam.
  • Chop up or julienne carrot, avocado, cucumber, radishes, pineapple and jalapeno. Place them in different small bowls.
  • Arrange your 2 poke bowls : place rice at the bottom and add on top all the other ingredients. Sprinkle with sesame seeds and/or nori flakes.
