- 2 cups brown rice, cooked
- 1 cup vegan poke (tofu), marinated *
- ½ cup edamame or green peas, cooked
- 1 handful broccolini, raw or roasted
- 1 carrot julienned or spiralized
- 1 avocado cubed
- 1 cucumber, sliced
- 2-3 radishes, sliced
- ¼ pineapple, cubed
- 1 jalapeno, sliced
- 1 tsp sesame seeds for topping or nori flakes
- 1 tsp coconut oil or olive oil
- 2 pinches paprika
Cook brown rice according to instructions.
Prepare your vegan poke (tofu) following our recipe (vegan poke)*.
Roast broccolinis for 5-10 minutes in the oven (180C) with a drizzle of coconut oil (or olive oil) and fresh ground pepper and paprika.
Cook edamame or green peas, in the microwave or steam.
Chop up or julienne carrot, avocado, cucumber, radishes, pineapple and jalapeno. Place them in different small bowls.
Arrange your 2 poke bowls : place rice at the bottom and add on top all the other ingredients. Sprinkle with sesame seeds and/or nori flakes.
