VEGAN BLACK CHARCOAL PIZZA DOUGH AND A GREEN PEAS PASTE

INGREDIENTS

PIZZA DOUGH

  • 100 gr dark buckwheat flour
  • 135 gr spelt flour - (eventually sprouted spelt flour)
  • 2 tbsp activated charcoal powder
  • 175 ml water
  • 1 tsp active dry yeast
  • 1 tsp olive oil

GREEN PEAS PASTE in a whizz

  • 3 cups basil
  • 1 cup green peas - defrosted or fresh
  • 2 garlic cloves - grated
  • 1 tbsp olive oil
  • 1 tbsp water

TOPPING (1) for 2 small pizzas

  • Few spring onions
  • Few baby tomatoes, pricked
  • Few spinach leaves
  • zucchini, thinly sliced
  • Himalayan salt & freshly ground pepper, to taste

TOPPING (2) for 2 small pizzas

  • ¼ sweet potato, peeled and thinly sliced
  • ¼ beetroot, peeled and thinly sliced
  • 2 radishes and thinly sliced
  • 1 tsp dried herbs
  • Himalayan salt & freshly ground pepper to taste

TOPPING (3) for 2 small pizzas

  • ½ small zucchini (spirulized or peeled into ribbons)
  • 2 tbsp green peas, defrosted
  • 1/3 bell pepper, sliced
  • 10 mint leaves
  • Himalayan salt and fresh ground pepper to taste
  • ½ tsp Cayenne pepper

INSTRUCTIONS

PIZZA DOUGH

  • Mix the water and the dry yeast in a small bowl and stir well. Set aside.
  • Combine the buckwheat flour, spelt flour, charcoal and some fresh ground pepper in a large mixing bowl. Using a wooden spatula, stir them well until you have a uniform dark color and make a well.
  • Gradually add the water and knead for 2 to 5 minutes until the dough forms a ball (first using the wooden spatula then using your hands). Add more flour if it's very sticky to your hands.
  • Divide the ball into 2 medium pizza (or 6 small). Rub each dough with olive oil, put them back into the bowl and cover the bowl with a kitchen towel. Set aside for 1 to 2 hours to prove.
  • Prepare a silicone baking mat (or a piece of baking paper) and flour it. Flatten the dough with the palm of your hand first. Then roll the dough with a rolling pin. Move regularly the sides of the dough and flip it sometimes too to be sure that it doesn't stick to the mat and add more flour when needed. Create 2 medium pizza round (or 6 small pizza).
  • Preheat the oven to 180-185 °C (fan).

GREEN PEAS PASTE

  • Blend all the ingredients together in a food processor.
  • Add some green peas paste to each pizza dough.

TOPPING

  • Add the topping of your choice on each pizza.
  • Move the silicone mat (or baking paper) to the baking tray and bake for about 15 to 20 minutes. Enjoy.
