4dried tomatoes, (dehydrated in the sun) - if in oil, rinse them first
10leavesfresh basil
1garlic clove
3 tbspolive oil
3 tbspwater
½lemon juiced
Himalayan salt and fresh ground pepper, to taste
Instructions
Wash the spinach and the basil. Drain them well.
Place all ingredients in a medium mixer (or a blender) and mix until well combined. If the pesto is still too dry put a little bit more water (one tbsp at a time) and mix it again. It’s ready !
