Preheat the oven to 160C (fan).
Using a small mixer, grind your pumpkin seeds into flour.
In a large bowl, mix well all ingredients together using a spatula. Then on a chopping board, form a long roll with the mixture using your hands.
Wrap the roll into cling film (or waxing paper) and keep the dough in the fridge for 20 minutes.
Take the roll out of the fridge and unwrap it.
Take a sharp knife and cut down slices approx. 1 cm thick.
Place the slices on a lined baking sheet and form a nice cookie with your hands. Eventually, use the bottom of a glass to flatten nicely each cookie.
Place it in the oven and bake it for about 13 min. Stay near and check them out regularly until they are getting a little brown/golden.
Take them out and let them cool down.
Decorate the cookies as you like! I decorate them with melted dark chocolate and roasted pumpkins, it's a hit !
