½ cupmacadamia nuts, soaked for at least 3-4 hours (or replace by cashews)
1 cupdried dessicated coconut
1 cupdates, pitted (and soaked in warm water for 3 min if too dry)
1lime juice, squeezed
4 tsplime zest (or zest of 2 limes), finely grated
2 tbspcoconut oil , melted (microwave or bain-marie)
1tbspcoconut bliss , melted (microwave or bain-marie) (optional)
Instructions
Soak cashews for at least 4 hours or overnight. Soak macadamia nuts for at least 3 hours or overnight.
Place all ingredients in a high speed blender and blend for 30 to 60 seconds or until you reach a sticky dough.
Line a square baking dish (approx. 21 cm x 21 cm) with baking paper. Spread the mixture into it and press it down to be compact. You can use a piece of baking paper on top and roll a rolling pin to flatten the mixture (or the bottom of a glass).
Put into the freezer for at least 6-8 hours or overnight.
Using a sharp knife, cut into small squares and store them back in the freezer in an airtight container for 10 days or more. Take them out when you need something sweet (if too hard, let it warm up few minutes).
I love to eat 2 or 3 for breakfast or as a snack.
