INGREDIENTS
BASE
1 cupdates, eventually soaked in hot water
3/4 cupbrazil nuts (or whatever you have on hand)
1 tbsplemon zest, grated (approx. 1 lemon)
1pinchof Himalayan salt
LEMON CURD CHIA CREAM
1 cancoconut milk (full fat)
1freshly squeezed lemon (small)
1 tbsplemon zest, grated (approx. 1 lemon)
3 tbspchia seeds
1-2pinch(es)vanilla powder
1-2tbspmaple syrup (optional)
INSTRUCTIONS
BASE
If you can not break down easily the dates, soak them first in hot water for 3-5 minutes.
In the meantime, chop the brazil nuts roughly, using a blender. Set aside.
Zest 1 lemon.
(If you've soaked the dates, remove them from water). Mash the dates with a fork until a chunky paste is formed. Add the nuts, the zest and a pinch of salt. Stir to combine, using a fork.
Press it slightly into the base of 6-8 serving dishes.
LEMON CURD CHIA CREAM
Use a whisker and mix well the coconut milk, the lemon, the zest, the vanilla and 1-2 Tbsp of maple syrup (optional) in a large mixing bowl.
Add 3 Tbsp * of chia seeds and whisk for 1-2 minutes to distribute evenly the chia seeds into the milk. Let it sit for 1-2 minutes and whisk again for few minutes.
Pour the mixture over the base and refrigerate for at least 2 hours or overnight. Decorate with coconut flakes, etc... and serve !
Notes & Tips
* I like it creamy and not well set (like a chia pudding might be). If you want to add more chia seeds for a well set pudding, do not exceed a total of 5 Tbsp of chia seeds for the whole recipe.
