Yes, you can easily make your own healthy tortillas. They can be low in gluten too and easy to digest. It is definitely so much better than any store-bought tortilla !
3pinches Himalayan salt + fresh ground pepper to taste
1tbspolive oil
1-2pinchesdried thyme , or fresh thyme
2tbspwater
Extra flour to dusting
Instructions
Pour 200 g of spelt flour into a mixing bowl. Add the coconut yogurt, salt, olive oil, thyme and pepper. Using a wooden spoon (or spatula), mix it well together.
Add 1 tablespoon of water first and mix it again. Add another tablespoon of water and use your hands to mix well until you have a slightly sticky dough.
Next, gently knead the dough by hand for about 30 seconds, either within the bowl or on a lightly floured surface to prevent sticking.
Let the dough rest for 15 to 30 minutes (cover the bowl with a kitchen towel).
Then, divide the dough into 4 equals part.
Lightly dust your work surface with extra spelt flour. Gently flatten a dough ball with your hands. Then, using a rolling pin, carefully roll it into a round tortilla, rotating it frequently to prevent sticking. Add a small amount of flour as needed.
Heat a non-sticky skillet over medium heat. Cook the tortilla for about 45 seconds on each side (or until you see air bubbles forming). Repeat it for the 3 other.
Tip : keep them in the oven (50C fan), while you finish the filling and serve it warm.
