Combine the bar ingredients together and mix with a spoon until well coated (it might take 5 minutes). Press the mixture together.
Then press it firmly into the bottom of a cake pan lined with parchment paper (I use a rectangular loaf cake pan 22cmx13cm). The thickness of your bar is approx. 1 cm.
Put into the fridge and prepare the coating.
COATING
Combine the coating ingredients in a pan and heat gently (low heat) until the coconut is totally melted (do not boil), whisking regularly. Remove from the heat and whisk until smooth. Let it cool for few minutes to thicken.
Remove the bars from the fridge and pour the chocolate coating over them.
TOPPING
Sprinkle the nuts, cacao nibs, and sea salt flakes over the top. Chill overnight in the fridge (or at least for 1-2 hours).
