Coconut Lime Dressing Recipe

This coconut lime dressing is a very simple and delicious dressing. Oil and dairy free, this dressing will pump up any salad !

I love the hint of coconut and the fresh lime in it. The dill adds a bright flavor too !

It is a 5 minutes dressing, especially if you have already an open can of coconut milk. If you did last night my butternut kale curryΒ or a guilt-free dessert like my lemon curd chia cream you should have some extra milk from your coconut can.

Coconut milk in can is one of my main food staples in the kitchen. I have always a can of coconut milk and/or coconut cream (extra thick and rich) in the fridge. The only reason is that I want to be able to do a whipped coconut cream anytime. You can use coconut milk in so many ways and recipes, it’s endless !!

I love the taste of coconut in all forms. And this coconut lime dressing is so good.

In addition, it is a very healthy food, like coconut water and coconut oil. It contains beneficial fats called saturated fats which can help to lower cholesterol levels and to improve blood pressure. It seems to help digestion issues too.

Top Tip

At the supermarket, try to look for organic and cold pressured coconut milk. The main ingredients should be coconut milk and probably coconut. Some producers add guar gum which is a natural stabilizer. Just make sure that you buy an unsweetened can of milk.

When you open the can and you have leftover, pour it in another container like a small milk bottle and use it in the next 2-3 days.

COCONUT LIME DRESSING

A delicious dressing made in 5 minutes that tastes delicious. Lime and coconut is a winner combo.

INGREDIENTS

  • 1 lime, freshly squeezed
  • 4 tbsp coconut milk - (full fat)
  • 2-3 fresh dill stalks, finely chopped
  • Gomasio and Fresh ground pepper to taste

INSTRUCTIONS

  • Take a medium bowl and whisk all the ingredients together until well combined. Serve immediately or keep in the fridge for 2-3 days.
